Kale & Potato Soup
Ingredients1 large bunch kale
3 lbs medium potatos
2 lbs pork belly
salt
white pepper
black pepper
cayenne pepper
Preparation Time: Approximately 15-20 minutes
Cooking Time: 2.5-3 hours
Instructions
1. Thoroughly wash and roughly tear kale into medium size pieces. It's okay to use your judgement on how small the pieces should be based on who will be eating the soup. Keep in mind that no one wants to go take a bite of kale and have a giant piece of kale hanging out of their mouth.
2. Sear pork belly on both sides in a pan until lightly browned
3. Meanwhile, peel potatoes and cut into bite size pieces- about 4-6 pieces per potato.
4. Using a soup pot, place all ingredients into pot and just cover with water. Bring water to boil, and then turn down to medium-low and bring to simmer.
5. Cook for approximately 2.5-3 hours until meet falls the bone and you can easily stick a fork through potato chunks. Enjoy!
